Alot of side quests (and main quests) in video games boil down to "go here, do this, come back". I found the side missions in Origins (and other AC games) were really good at building the world and characters. In general, the side missions in Origins, Odyssey and Valhalla are much better crafted than earlier AC games.

Iplayed AC Odyssey last and loved it so much, the story, the characters, the combat, the world. I played Origins and its DLCs first, then Odyssey (120+ h in, not done with the story yet and I don't have the DLCs). I got bored of origins quite fast, even though Aya and especially Bayek are amazing characters and ancient Egypt is beautiful
